Antimicrobial Properties and Conditioning

Natural woods like maple and oak possess innate antimicrobial properties due to their porous, thirsty nature and the presence of extractives. Bacteria are often drawn into the wood's interior through capillary action, where they are deprived of moisture and die.

Conditioning maintains this function by keeping the wood fibers supple and preventing deep cracks where food debris could rot. A well-maintained, oiled surface facilitates easy cleaning, ensuring that the wood's natural defensive mechanisms can function effectively without being overwhelmed by external organic buildup.
