Start with 100 or 120 grit to level the surface. Progress to 150 and then 180. Before the final sand, lightly mist the wood with water (water-popping). This intentionally raises the grain so it can be sanded off with 220 grit. Once the oil is applied, the fibers will remain flat, resulting in a glass-smooth "burnished" feel that is easier to clean and maintain.

Surface Tension and Water Beading Performance Standards

The primary role of a kitchen oil is hydrophobicity. High surface tension causes water to bead rather than soak into the grain. Performance is measured by the contact angle of water droplets:

  • High Performance: Tight, spherical beads indicating a saturated, cured surface.
